It's Maundy Thursday today.
Maundy / Holy Thursday starts the beginning of Holy Week and we remember Jesus on his Last Supper with the Apostles. It is also on the night of Maundy Thursday that Jesus was betrayed by Judas.
We were intending to do the Bisita Iglesia or Church Visiting today , which is a tradition both my family and my husband's observe, but we opted to stay home and take the time to reflect.
The subject of the Last Supper made us think about our own Last Supper. Like the prisoners who are on death row and get a "special last meal". That got me thinking, what would be mine? I had no idea; there's just too much to choose from! I thought I would pick my ultimate comfort food, but no I don't think I would. My husband was equally confused on what to pick.

What would be your last meal?
Out of curiosity, I asked my father. "Any omelette," he answered right away without thinking.
"Give me specifics. Plain? With Potatoes? Ham?" I asked.
"Maybe potatoes. Just like the ones I often make," Father said.
"Hmmm potatoes. That sounds good. Maybe you should make that tonight. Just potatoes and eggs." I told him.
"And cheese."
So that's how our dinner meal was decided. And Father was in charge tonight.
What he did was peel and cube some potatoes, sauteed them in a pan, and topped with a little cheese (Emmenthal). When the potatoes were cooked, he just added beaten eggs, seasoned it with salt and pepper, and flipped it on one side.
And we also fried some tuna tocino to go along with it. No-meat meal.
