Japanese-Inspired Potato and Egg Salad


This recipe came about for 2 reasons. One, I wanted something to complement the sandwiches I made. I thought about how Cafe Georg serve their sandwiches with a siding of Potato Salad and I love that! And Two, I wanted to use the Ebiko I bought. So, there it is: Japanese-Inspired Potato and Egg Salad.

JAPANESE-INSPIRED POTATO AND EGG SALAD

Ingredients:

8 medium potatoes, cubed, boiled, and drained
2 eggs, boiled, drained, peeled, and chopped
1 tablespoon Ebiko
1/2 cup Japanese Mayonnaise
Salt
Pepper

Directions

In a serving bowl, put cubed potatoes and eggs together. In a small bowl, mix the mayonnaise and ebiko together. Add the mixture to the potatoes and eggs and stir well until every pieces are coated. Season with salt and pepper. Refrigerate until it cools. You can serve it warm if you prefer; I prefer cool. Serve and enjoy!
