My daughter, SM, absolutely loves mushrooms! All kinds of mushrooms! I love asparagus! So it only makes sense that I would buy mushrooms and asparagus every time I go grocery shopping. We eat a lot of these two and I always try to find new ways to make them. This particular dish I made is great with just about any other vegetable combinations. You may also add your choice of proteins, if you prefer.
Here's the vegetables I used.
I kept it protein-free, with just the oyster mushroom and asparagus. I did however serve it along side fried bangus belly.
Ingredients:
- 4 cloves of garlic, minced
- 1 bundle of asparagus, that's about 10-15 stems of asparagus, trimmed and sliced
- 1 pack (300 grams) oyster mushrooms
- 1 tablespoon oil
- 2 tablespoons oyster sauce
- 1 tablespoon fish sauce
- pinch of salt
Directions:
Heat oil in a wok or a pan if you prefer. Saute garlic until fragrant.
Add the asparagus and saute.
Add oyster mushrooms and saute. Add a pinch of salt. This will extract the liquid of the vegetables. Saute.
Add the oyster sauce and stir.
Add fish sauce, stir, and mix well. Season again if you like (I didn't). Transfer to serving plate. Serve hot and enjoy!
