You might be asking yourself what is Friture de Joels. I myself had no idea what it was when I saw it in the frozen food section of the store. I had to take a closer look to see that these were small fish. Closely similar to the White Bait fish. For small fish like this, there is only one recipe I can think of and it's family favorite!
Defrosting it is real easy. Put the frosted sachet in a large bowl under hot running water. Turn it from side to side for a couple of minutes.
Next, transfer the fish in a bowl and cover with milk. Stir.
In another bowl, add flour, salt, and black pepper. Mix.
Drain the fish from the milk and transfer to the flour. Stir well so that every fish is evenly coated by the flour.
Heat oil in a deep pan. When the oil is really hot, fry the fish. Do this in batches so the pan isn't overcrowded. Fry until the fish turns golden brown. Transfer to a towel-lined plate so that the extra oil is absorbed. I like to sprinkle the fried fish with salt and a squeeze of lemon juice. Serve hot and enjoy!
