Tomato Salad

I can never have enough tomatoes. One of my favorite time during the summer is when the tomatoes have ripen and you have displays after displays of them. I love that there are so many varieties of tomatoes available here. My dream is to someday own a house with its little gardening space to grow my vegetables and fruits. In the meantime, I get my tomato fill from either the weekly market or the grocery store and I cannot get enough! They go everywhere - in roasted meat, sauces, stuffed, and even as afternoon snacks (cherry tomatoes). And like today in a simple Tomato Salad.

Slice the tomatoes thinly and transfer to the serving plate.

Add mixed salad seasonings and sliced shallots. Splash with oil and then vinegar and season with salt and black pepper. Mix together when serving.

Dinner is served: Tomato Salad with Green Salad, Hard Boiled Eggs, and Tuna
