SO got accepted in the swimming program we applied for! Yey! All that is left is to wait for a spot to open up. The gym's supervisor called and asked if we could drop by today to finalize the details and payments. As you can imagine, SO was the first out the door for our appointment. After a quick visit of the place, MR and I decided that this was perfect for SO and we are excited for her to start her training right away!
To keep up with the theme of the day and perhaps inspire SO to swim like a fish, I thought I'd prepare a fish dish for lunch today. LOL. A Filipino fish dish to be exact. So I looked and looked online, until I stumbled on the one I wanted. Sarciadong Isda.
I still had an open pack of Rouget / Red Mullet fish in the freezer. This was perfect as there were no fish bones. Defrost and fry the fish. Transfer to a plate and set aside.
In a pan, heat some oil and saute 1 sliced onion and 4 minced garlic cloves until fragrant.
Add 2 medium chopped tomatoes. Cook until the tomatoes are mushy.
Add a cup of water and bring to a boil. Then, lower the heat and let it simmer. Add 1 tablespoon of fish sauce.
Transfer the fish back to the pan. Let it simmer.
In the meantime, beat 2 eggs in a bowl. Add the beaten eggs to the pan. Do not stir, just let it simmer slowly until it settles. Garnish with sliced scallions.
Lunch is served: Sarciadong Isda / Filipino Fish with Tomatoes and Eggs and White Rice
