I don't know if I mentioned this earlier, but it's officially been Spring for the past 4 days. The weather has been unusually cool, almost too warm for the season. Considering the lack of Winter we had, I thought Spring would be absent or pretty harsh, but so far it's been pretty good. The sun is out and it's warm enough to go on walks and have picnics. I take all of these as signs that it's time to ditch my Winter soups and move on to my Spring salads!
My go-to salad dressing lately: 1 part vinegar, 3 parts olive oil, 1 teaspoon of cream / creme fraiche, salad seasonings, sea salt, and black pepper.
My husband, MR, wasn't much of a salad lover before. But I made him realize that a salad doesn't have to be boring. You can try different salad dressings, different varieties of salad, and most importantly, you can add in whatever ingredients you want.
Leftover Grilled Salmon, Roasted Chicken, Cherry Tomatoes, Avocado, Red Onions, Cucumber, Bacon ...
I swear I can use about anything! It all depends on my tastebud and what I can find on-hand. Tonight's case: ham, corn, and lettuce.
