Easter Monday Lunch: Roasted Lamb, Sauteed White Asparagus, and Steamed Couscous
Did I mention that MR recently started a new job? Well, he did and that is extremely good news! Unfortunately, he was not able to spend Easter with us yesterday. But no worries as this looks like the start of a beautiful career for him. Moving to a foreign country like France, with the language barrier, is very complicated! Anyways, we were invited by my sister to have lunch over at her house to celebrate Easter together. We agreed that SO and I would attend, while MR cancelled since he was working. She prepared a wonderful 3 course-meal and I brought her a delicious Easter cake for dessert. I felt bad that MR was missing all of this knowing that he was most probably not going to have the same meal at the hospital. So because today is his rest day, I thought I'd prepare him a special Easter Monday lunch to make up for yesterday.
We love lamb meat, but I realized that we don't eat it as often as chicken or beef. In the past years, I've noticed that the only times we ever had lamb was around Easter.
The Roasted Lamb preparation was pretty simple. I made sure to get a piece without any bones. Don't you just hate it when you get a 500 grams piece of meat and find out that it's actually 400 grams of bones and 100 grams of meat. I'm not making that mistake again! So I just rubbed the lamb piece with mustard, salt, and black pepper, covered it with aluminium foil, and baked it slowly in an oven for 2 hours. The meat was tender and was just cooked. It rendered a wonderful juice that I set aside to serve with the meat.

After seeing MR eat his heart out and looking at me with eyes of love, I can confirm that the best way to a man's heart is through his stomach!!! <3
