Saucisses aux Lentilles / Sausage with Lentils

I am happy to say that a couple of days have passed since the second round of elections and everything seems to have gone back to normal. My little town is once again calm and problem-free, it seems. This is great news considering that this town is really small, with a population of about 200 persons only. The last thing we need are bad negative vibes in the neighborhood. Anyways, it seems like everyone is back to their routine, including myself. And my routine is finding a little time to do what I love to do best - cooking. And today, I'm cooking Saucisses aux Lentils / Sausage with Lentils.

In a deep pan, add 1.5 liter of water. Then add in 2 sliced carrots, 4 smoked pork sausages, and a bouquet garni. Bring to a boil and let it cook for 20 minutes. Drain the water, remove the bouquet garni, and set aside.

At the same time, heat another pan on medium fire and add the lardons. You do not need to add oil or butter as the lardons will render its fat. Add a pinch of salt and continue to fry until it browns.

Add a diced onion and continue to fry. Stir.

Open the can of prepared lentils. Drain the liquid if there is any.

Add the lentils with the fried lardons and onions. Stir.

Then add the drained smoked pork sausages and carrots. Add a ladle full of water. Season with black pepper.

Cover and simmer on low heat for 25-30 minutes.
Turn off the heat.
Serve hot and enjoy!
