After weeks of waiting, it's finally been warm enough to eat out in our backyard. So I thought I would bring out our little barbecue grill - dust and clean it thoroughly. Thankfully, I still had half a bag full of charcoal left from last year and all of the materials and tools needed. SO and MR took care of our outdoor tables and chairs, which also needed a major clean-up. And while they did that, all that was left for me to do was preparing the meat.
I had a couple of lamb chops waiting for me. I wanted this to stay pretty simple so I prepared them the same way I usually prepare my Cote de Boeuf (click here for the post).
Season the lamb chops with rock salt. Set aside for 15-20 minutes.
Scrape off the salt with a knife. Next, drizzle the lamb chops with olive oil and sprinkle with herbes de provence and black pepper. Rub all over.
Grill on the prepared barbecue for a couple of minutes on both sides.
Transfer the lamb chops on a plate and let it rest for at least 10 minutes. Serve and enjoy!
Our simple lunch table :)
Lunch is served: Grilled Lamb Chops, Roasted Potatoes and Brussel Sprouts, and Red Beets Salad
