Cherry Pie

One thing that I love in summer are the fruits. While I prefer winter food (stews and soups), I am a sucker for summer fruits - Strawberries, Peaches, Nectarines, Melon and my absolute favorite ... Cherries! I eat them by the handful anytime during the day and these are the first things I look for in the weekly open markets.

Lately, I've been thinking of making something with cherries for a change. Cherry Pie. But every time I had cherries on my kitchen counter, they looked too good and we'd end up snacking on them. MR has become a big fan as well. Which is why I made sure to pick up a whole lot more than usual when I was at the open market yesterday and I cleared my morning schedule today to make the Cherry Pie.

Prepare 600 grams of cherries. They should be washed, seeded, and sliced in half.

Transfer the cherries in a bowl. Add a teaspoon of lemon juice, half a teaspoon of lemon zest, 50 grams of white sugar, and 1 tablespoon of cornstarch. Mix together.

Prepare the first crust. Transfer to a baking dish and poke holes all over with a fork.

Transfer the cherry mixture on the crust and spread around.

Cover with a second crust. Today, I wanted a lattice top pie crust. It's not perfect, but it was my first time. Make sure to pinch together the edges or use a fork to really seal the edges.

In a small bowl, beat an egg.

Brush the egg mixture on top of the crust and sprinkle 1 tablespoon of sugar.

Bake in a 180 degrees Celsius preheated oven for 40-45 minutes. It should be golden brown. Let it rest. Sprinkle with icing sugar if desired.

Of course as soon as it was cooled down, MR just had to get a piece right away. And he just had to have a scoop of vanilla ice cream with it.

Thankfully we had some inside the freezer! :D
