MR's Birthday Lunch - Creamy Beef Liver, Buttered Corn, and Rice
My husband, MR, turned 31 years old today. How does he feel about turning 31?! Not so bad, I must say. I gotta ask him how he does it though. I'm turning 30 at the end of this year and I'm already freaking out at the thought!
Anyways ... MR's birthday did not turn out quite as expected. For the past month, MR and I have been sharing 1 car and our second car decided it was time to act out and break down. And if that wasn't enough, our 6 year old daughter has an abscessed tooth and is suffering a lot. Grrrrr!
Have you ever had one of those days when nothing goes right and you wish it was all a dream?! Poor MR, it just had to be on his birthday.
So, I had lots of activities planned for today because MR wasn't working today. But with the car in the garage shop, we were reduced to staying at home. It wasn't too bad though, as we spent the day with each other. Of course, I had to take a break from that to prepare a delicious lunch for us. The birthday boy definitely deserved something good for his special day! :)
MR loves offal so I thought it would be a good idea to cook beef liver for lunch. We're really lucky to have access to delicious and fresh beef liver. Today, I decided I would try it differently. I've only ever prepared it like this (click here and here) and I thought I'd try out something new.
In a pan, add a tablespoon of butter and oil. Prepare the liver by slicing in strips (this process is a bit icky with the strong smell of the beef liver). Add the liver strips to the pan and fry until there is no blood. Add a sliced shallot to the pan. Add 2 tablespoons of mustard and 1 tablespoon of lemon juice. Stir and add 200 ml of cream. Stir again. Season with salt, black pepper, and ground nutmeg. Stir. Serve hot and enjoy!
