Chocolate Zucchini Cake


This cake is simply amazing! It's become a family favorite and I've probably made it a dozen times now. For the family, for friends, for colleagues, and even trainees! The reviews have been beyond positive by everyone, even from my fiercest critics! And that's before I tell them, that it's a special cake with a special ingredient which replaces the fat - butter / oil / cream / creme fraiche / yoghurt. So not only is this cake delicious, but it's part of a guessing game too!


So what is the secret ingredient? As you probably guessed by reading the title of the Post - Zucchini, which of course leaves my lucky tasters open-mouthed when I tell them that I use a vegetable in a chocolate cake. And by the way, no one has ever been able to guess the secret ingredient.



Prepare the ingredients needed: 400 grams of zucchini, 4 eggs, 150 grams sugar, 200 grams chocolate, 2 tablespoon of cocoa powder, 100 grams of flour, 1 tablespoon of baking powder, and a pinch of salt



Peel and grate the zucchini. Squeeze with your hands and drain the water. Repeat 3-4 times.



In a bowl, beat the eggs with the sugar. Add the zucchini, flour, baking powder, salt, cocoa powder, and the melted chocolate. Mix well together.



Transfer to a buttered or silicone baking pan.



Bake in a preheated 180 degrees Celsius for 30 minutes.
Remove the cake and set aside. Let it cool before transferring from the pan.
I know the cake is cracked - it happens - but I don't mind it.



Sprinkle with icing sugar. Enjoy!



This is really a big hit in my household! Especially with my daughter, who just said that this was her favorite Chocolate Cake (and she's not a big fan of cakes!). I love that she's eating cake and her vegetables too!
