Ginataang Tahong / Mussels in Coconut Milk


I enjoy a lot cooking for my family. In the past, I had a lot more time to do that and I miss those moments terribly. These days, we've each been eating out a lot. SO goes to the school cafeteria and the nounou, MR eats a meal a day at work, and if I'm out working I eat in restaurants, take-out, or fast-food (if I have no time). We eat well, but sometimes you just want some good homecooking. Missing those times, I thought I would take out my pots and pans tonight. On the way home from work, I decided to pick up the ingredients needed. I take pleasure in cooking, but a lot of times, I cook to make others happy. For SO, it's anything with pasta and cheese and for MR, it's anything with coconut milk. That's one of his biggest food weakness and Ginatang Tahong is one of his favorites!



In a deep pan, heat some oil. Saute diced garlic, sliced onion, and smashed ginger.



When the onion becomes translucent, add 2 tablespoons of fish sauce and black pepper. Stir together.



Add some sliced green onion (you can substitute with spinach if you prefer). Stir.



Add the mussels.



Cover and let it cook for 3 to 5 minutes. Uncover. The mussels should have started opening up.



Add a can of coconut milk and let it cook for 1-2 minutes.



Stir together well.



Serve hot and enjoy!
